Best of Slaw Fest 2019

This weekend was the annual Slaw Fest, the celebration of coleslaw. Here's our top three!

The third annual Slaw Fest at Sullivan’s Hardware took place this past weekend. What is Slaw Fest? The only celebration of coleslaw in the country, possibly THE WORLD! Mac ‘n cheese has had its time, but we celebrated the true American side dish with over 20 different coleslaw recipes. If you missed out, don’t worry we’re here to share our top three favorite slaw dishes.

Charcuterie Coleslaw
 

The classiest slaw you’ll ever eat. If you enjoy the finer things in life, like a charcuterie board, this is for your next dining experience. Make sure to pop some champagne to compliment the beauty of this dish!

 

Coleslaw and a plastic cup of champagneIngredients
1 sack, 16 oz, shredded cabbage mix for slaw
Salami, thinly sliced and quartered
Green olives, pitted and sliced
Black olives, pitted and sliced
Mozzarella cheese, grated

Dressing
¼ cup red wine vinegar
2 tablespoons sugar
2 tablespoons peanut or vegetable oil
Salt and pepper

Directions
Put cabbage mixture in a large bowl.
Add the salami, olives, and cheese in the proportion you desire.
Mix all the ingredients together.
To make the dressing, combine red wine vinegar, sugar, peanut or vegetable oil, salt, and pepper in a medium mixing bowl.
Add dressing to slaw mixture and toss. Refrigerate for at least a half-hour before serving.
 

Pulled Pork Sundae with Creamy Coleslaw

This will be a HIT at your next BBQ. The dish is pretty self-explanatory and is pretty much all-American. Grab you favorite baked beans and pulled pork recipe and get to it!

1 head green cabbage, finely shredded
2 large carrots, finely shredded
¾ cup best-quality mayonnaise
2 tablespoons grated Spanish onion
2 tablespoon sugar, or to taste
2 tablespoons white vinegar
1 tablespoon dry mustard

2 teaspoons celery salt
Salt and freshly ground pepper

Directions
Combine the shredded cabbage and carrots in a large bowl.
Whisk together the mayonnaise, sour cream, onion, sugar, vinegar, mustard, celery salt, salt, and pepper in a medium bowl
Add dressing to the cabbage mixture. Mix well to combine and taste for seasoning.
To make a sundae:
Put a layer of your favorite BBQ beans, then add some pulled pork with your favorite sauce, and top it off with the slaw!

 

Deconstructed Rueben with Oil and Vinegar Slaw

The STAR of the festival! Winner winner, Rueben dinner, can't beat an old-fashion Rueben unless of course, you make it this way.

Ingredients
¼ cup of red wine vinegar
2 tablespoons sugar
2 tablespoons peanut or vegetable oil
1 sack, 16 oz shredded cabbage mix for slaw salads
1 teaspoon of salt
Pepper to taste
Corned Beef

Thousand Island dressing

Directions
To make the dressing, combine red wine vinegar, sugar, and salt in a medium bowl.
Add cabbage and carrot mix to the dressing. Add peanut or vegetable oil for desired consistency. Then add salt and pepper to taste.
Set you slaw to the side and prepare corned beef as desired. Once the meat is finished cooking, shred or chop as desired.
Place slaw on a plate put corned beef on top, and drizzle with Thousand Island dressing.

Our beloved friend and chef extraordinaire, Linda Allee, stopped by and shared her version of a slaw dessert. Don’t let idea fool you, you’ll be pleasantly surprised! Plus, it’s technically a vegetable so it must be healthy, right?
